Gluten-Free Ragi and Makki Chillas

Ingredients

  • 1 cup maize flour
  • 2 pinches turmeric powder
  • a pinch of asafoetida powder
  • some ajwain
  • some finely chopped fresh chillies
  • some finely chopped coriander
  • some finely chopped spring onions
  • salt as per taste
  • some shredded carrot
  • 1 cup ragi flour
  • 1/2 teaspoon cumin seeds
  • water
  • oil for shallow frying

Preparation

  1. Take a mixing bowl and add 1 cup maize flour

  2. Add a pinch of turmeric powder

  3. Add a pinch of asafoetida powder

  4. Add some ajwain

  5. Add some finely chopped fresh chillies as per taste

  6. Add some finely chopped coriander

  7. Add some finely chopped spring onions

  8. Add salt as per taste

  9. Add some shredded carrot and mix it well

  10. Add some water to make a soft and thick batter for the makki batter

  11. Take another mixing bowl and add 1 cup ragi flour

  12. Add a pinch of turmeric powder

  13. Add 1/2 teaspoon cumin seeds

  14. Add some finely chopped fresh chillies as per taste

  15. Add some finely chopped coriander

  16. Add some finely chopped spring onions

  17. Add some shredded carrot

  18. Add salt as per taste and mix it well

  19. Add some water to make a soft and thick batter for the ragi batter

  20. Heat up a pan and pour 1/2 teaspoon oil on it and spread it around

  21. Pour a spoonful of each batter on the pan to make small chillas

  22. Drizzle some oil around it and cook until it gets a golden-brown color

  23. Make more chillas following the same procedure

  24. Serve them hot with curd to taste

Tips

  1. You can add spices as per your choice while making the batter

  2. Enjoy with chutney, pickle, or curd for a delicious breakfast

  3. This recipe is gluten-free and almost vegan
