Spicy Sorghum Masala Roti

Ingredients

  • 1 cup sorghum flour
  • 1 cup water
  • 1/2 teaspoon coarsely ground cumin
  • 1/2 teaspoon white sesame seeds
  • Salt to taste
  • Oil for applying on dough
  • Finely chopped coriander
  • Ground black pepper

Preparation

  1. Heat 1 cup water in a deep-bottomed vessel.

  2. Add 1/2 teaspoon coarsely ground cumin.

  3. Add 1/2 teaspoon white sesame seeds.

  4. Add salt to taste.

  5. Boil the water.

  6. Add 1 cup sorghum flour and immediately turn off the heat.

  7. Add finely chopped coriander.

  8. Add ground black pepper.

  9. Mix everything well, cover, and let the dough rest for 5 minutes.

  10. Transfer to a bowl and knead into a soft dough.

  11. Apply some oil on the dough.

  12. Form balls from the dough.

  13. Cover the remaining dough with a wet cloth.

  14. Take one dough ball and roll it in dry flour.

  15. Roll it into a roti using a rolling pin.

  16. Heat a tawa and place the roti on it.

  17. Cook both sides lightly.

  18. Move it directly to the flame and cook both sides until it puffs up. You can also press with a napkin on the tawa to puff it up.

  19. Remove from the flame and apply ghee.

  1. Enjoy with yogurt and pickle or your favorite vegetable.
