Spicy Sorghum Masala Roti
Ingredients
- 1 cup sorghum flour
- 1 cup water
- 1/2 teaspoon coarsely ground cumin
- 1/2 teaspoon white sesame seeds
- Salt to taste
- Oil for applying on dough
- Finely chopped coriander
- Ground black pepper
Preparation
Heat 1 cup water in a deep-bottomed vessel.
Add 1/2 teaspoon coarsely ground cumin.
Add 1/2 teaspoon white sesame seeds.
Add salt to taste.
Boil the water.
Add 1 cup sorghum flour and immediately turn off the heat.
Add finely chopped coriander.
Add ground black pepper.
Mix everything well, cover, and let the dough rest for 5 minutes.
Transfer to a bowl and knead into a soft dough.
Apply some oil on the dough.
Form balls from the dough.
Cover the remaining dough with a wet cloth.
Take one dough ball and roll it in dry flour.
Roll it into a roti using a rolling pin.
Heat a tawa and place the roti on it.
Cook both sides lightly.
Move it directly to the flame and cook both sides until it puffs up. You can also press with a napkin on the tawa to puff it up.
Remove from the flame and apply ghee.

Enjoy with yogurt and pickle or your favorite vegetable.
