Gujarati Sev Khamani Street Snack

Ingredients

  • 2 cup gram flour (besan)
  • Salt as per taste
  • 1 tbs sugar
  • 2 tsp crushed ginger garlic
  • Finely chopped green chillies (as per taste)
  • 1 lime juice
  • 1 tbs oil + 1/4 cup oil
  • 2 cup water
  • 1 tsp fruit salt (Eno)
  • 1 tsp black mustard seeds (rai)
  • 1 tsp white sesame seeds (safed til)
  • Some curry leaves
  • Pinch of asafoetida powder
  • 1/2 tsp turmeric powder (haldi)
  • Some pomegranate
  • Some finely chopped coriander leaves
  • Sev

Preparation

  1. Take a mixing bowl and add 2 cups of gram flour

  2. Add salt as per taste

  3. Add 1 tablespoon of sugar

  4. Add 2 teaspoons of crushed ginger garlic

  5. Add finely chopped green chillies as per taste

  6. Add the juice of half a lime

  7. Add 1 tablespoon of oil and mix it well

  8. Add approximately 1.5 cups of water gradually to make a thick batter with dosa consistency

  9. Turn on the stove and place a steamer on it

  10. Add 1 teaspoon of fruit salt and mix it well

  11. Pour the batter into a big plate greased with oil

  12. Place it in the steamer, cover with a lid, and cook for 20 minutes on high flame

  13. Rest it until it cools down

  14. Release the sides and demould it onto a plate

  15. Crush the dhokla with a spoon or hand to make khamani

  16. Heat up a pan and pour in 1/4 cup of oil

  17. Add 1 teaspoon of black mustard seeds

  18. Add 1 teaspoon of white sesame seeds

  19. Add some chopped green chilli

  20. Add some curry leaves

  21. Add a pinch of asafoetida powder

  22. Add 1/2 teaspoon of turmeric powder and mix it well

  23. Add salt as per taste

  24. Add 1/2 cup of water

  25. Add the juice of half a lime

  26. Once it starts boiling, add the khamani and mix it gently

  27. Add some finely chopped coriander leaves

  28. Add some pomegranate

  29. Add some sev and mix it again

  30. Transfer it to a serving plate and top with some pomegranate, chopped coriander leaves, and sev

Notes

  1. After 20 minutes, check if the dhokla is cooked by inserting a pin or knife; if it comes out clean, it is done
