Gujarati Sev Khamani Street Snack
Ingredients
- 2 cup gram flour (besan)
- Salt as per taste
- 1 tbs sugar
- 2 tsp crushed ginger garlic
- Finely chopped green chillies (as per taste)
- 1 lime juice
- 1 tbs oil + 1/4 cup oil
- 2 cup water
- 1 tsp fruit salt (Eno)
- 1 tsp black mustard seeds (rai)
- 1 tsp white sesame seeds (safed til)
- Some curry leaves
- Pinch of asafoetida powder
- 1/2 tsp turmeric powder (haldi)
- Some pomegranate
- Some finely chopped coriander leaves

Preparation
Take a mixing bowl and add 2 cups of gram flour
Add salt as per taste
Add 1 tablespoon of sugar
Add 2 teaspoons of crushed ginger garlic
Add finely chopped green chillies as per taste
Add the juice of half a lime
Add 1 tablespoon of oil and mix it well
Add approximately 1.5 cups of water gradually to make a thick batter with dosa consistency
Turn on the stove and place a steamer on it
Add 1 teaspoon of fruit salt and mix it well
Pour the batter into a big plate greased with oil
Place it in the steamer, cover with a lid, and cook for 20 minutes on high flame
Rest it until it cools down
Release the sides and demould it onto a plate
Crush the dhokla with a spoon or hand to make khamani
Heat up a pan and pour in 1/4 cup of oil
Add 1 teaspoon of black mustard seeds
Add 1 teaspoon of white sesame seeds
Add some chopped green chilli
Add some curry leaves
Add a pinch of asafoetida powder
Add 1/2 teaspoon of turmeric powder and mix it well
Add salt as per taste
Add 1/2 cup of water
Add the juice of half a lime
Once it starts boiling, add the khamani and mix it gently
Add some finely chopped coriander leaves
Add some pomegranate
Add some sev and mix it again
Transfer it to a serving plate and top with some pomegranate, chopped coriander leaves, and sev
Notes
After 20 minutes, check if the dhokla is cooked by inserting a pin or knife; if it comes out clean, it is done
