Garlic Fenugreek Stir-Fry with Peanuts
Ingredients
- 1/4 cup mildly roasted peanuts
- 1 tablespoon white sesame seeds
- 1 tablespoon gram flour (besan)
- Water
- 4 teaspoons oil (divided)
- 3-4 garlic cloves
- 1 big bunch fenugreek (methi)
- Salt to taste
- 1 teaspoon cumin seeds
- Pinch of asafoetida powder
- 1 medium-sized onion, finely chopped
- Green chillies, chopped
- 1 small ginger knob, chopped
- 1 medium-sized tomato, finely chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
Preparation
Blend peanuts and sesame seeds into a fine powder and mix with besan and water to form a thick paste and set aside.
In a pan, heat oil and sauté sliced garlic until golden, then stir in chopped methi and cook until wilted.
In the same pan, add more oil, cumin seeds, asafoetida, onions, green chillies, ginger, garlic, tomato, and spices to create a flavorful base.
Finally, mix in the peanut paste and cooked methi, let it simmer, and serve hot.
