Mushroom Bazi with Spices
Ingredients
- 300g button mushrooms
- 1 large onion finely sliced
- 2 - 3 tbsp oil
- 1 tsp salt (adjust to taste)
- 3 green chillies, roughly chopped
- 1 level tsp turmeric powder
- 1 tsp curry powder
- 1/2 tsp coriander powder
- 1/3 tsp chilli powder (optional)
- fresh coriander to garnish
Preparation
Finely slice the onion and button mushrooms.
Heat the oil in a large pan, once hot add the onion and salt, saute until soft and translucent. Add in the green chillies and fry for 2 minutes.
Next add the ground spices, taking care not to use too much turmeric powder. Fry the spices out for a few minutes.
Add the sliced mushrooms, mix well and then cover to cook through. The mushrooms will release a fair amount of liquid as they cook, remember to uncover the pan and stir to allow this to evaporate.
Once the mushrooms are cooked and most of the moisture has evaporated, garnish with coriander and serve immediately.
Tips
This dish is great with plain rice or pilau and is even better sandwiched in a buttered bun with cheese and lettuce.
