Masor Endar Bora (Fish Egg Patties)

Ingredients

  • 500g fish eggs (Rohu fish eggs recommended, but any roe can be used)
  • 1 small onion
  • 3-4 green chillies
  • Generous handful of coriander
  • 1 tsp salt
  • 1 tsp mixed curry powder
  • 1 tsp coriander powder
  • 1/2 tsp chilli powder
  • 1/2 tsp turmeric powder
  • Oil for frying

Preparation

  1. Grate the onion and finely chop the green chillies and coriander. Alternatively, use a food processor to blitz the ingredients until fine.

  2. Lightly wash the fish eggs with the membrane intact. Remove the membrane from the fish eggs either by hand or by passing them through a sieve/mesh strainer. The fish eggs will become mushy once the membranes are removed.

  3. Add the ground spices (listed above), onion, coriander, and green chillies to the fish eggs. Mix well to combine.

  4. Heat some oil in a frying pan. When hot, add 1 tbsp dollops of the mixture to the hot oil. Cook for a couple of minutes on each side until cooked through.

  5. Serve hot immediately and enjoy!
