Vegan Gourd Curry (Khodur Niramisha)

Ingredients

  • 1/3 of a medium-sized gourd, squash, or pumpkin, cut into 3cm cubes
  • Oil
  • 1 small onion, sliced
  • 2-3 cloves of garlic, roughly crushed
  • Salt to taste (3/4 - 1 tsp)
  • 1 tsp curry powder
  • 1 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/3 tsp chilli powder
  • 4-5 green chillies
  • A handful of chopped coriander

Preparation

  1. In a small pan, add enough oil to cover the base with a thin layer. Add the sliced onion, crushed garlic cloves, and salt. Cook covered until translucent.

  2. Add the curry powder, turmeric powder, coriander powder, and chilli powder to the pan. Fry for two minutes.

  3. Add the chopped gourd, squash, or pumpkin to the pan. Mix well and cook covered over low heat until soft and tender.

  4. Once the vegetable is soft, add the green chillies and cook for an additional 3 minutes. If the curry feels dry, you can add a splash of water. Bring to a final boil and garnish with chopped coriander. Remove from heat immediately.

  5. Serve the gourd curry with roti or rice. Enjoy!
