Cod Fish Fry
Ingredients
- 1/2 tsp chilli powder
- 1/2 tsp turmeric powder
- 1/2 tsp salt
- 2 tbsp oil (preferably mustard oil)_
- for the base:
- 1 - 2 tbsp oil
- 1 large onion, sliced
- 1 tsp salt (adjust to taste)_
- 1 tsp chilli powder
- 1 tsp coriander powder
- 1 tsp turmeric powder
- 1 tsp curry powder
- a pinch of ground panch phoron (indian 5 spice)_
- a handful of fresh coriander, chopped
Preparation
Mix the fish fillets with chilli powder, turmeric powder + salt
Add 2 tbsp of oil to a pan and fry the fish for 3 - 4 mins each side till cooked through
Reserve on a plate and flake the fish by hand once cool
To the same pan add 1 - 2 tbsp more oil, once hot add the sliced onion, chopped green chillies + 1 tsp salt
Saute for a few minutes till onions become translucent
Next add the ground spices; 1 tsp each chilli, turmeric, coriander and curry powder, saute for 2 - 3 minutes
Add a splash of water to loosen the onions if the pan seem dry, cover and cook till the oil separates from the onions
Add the flaked fish back to the pan with a generous pinch of ground panch phoron (indian 5 spice), this add an amazing aroma to the dish, and fry for 5 - 8 mins
Finally garnish with fresh chopped coriander and serve with plain basmati rice
