South Indian Bread Upma

Ingredients

  • 6-7 bread slices
  • 1/2 cup curd
  • 2-3 spoons water
  • Salt as per taste
  • 1/2 teaspoon turmeric powder
  • Red chilli powder as per taste
  • 1/2 teaspoon sugar (optional)
  • Juice of 1/2 lemon
  • 2 teaspoons oil
  • 1/2 spoon butter
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • Few curry leaves
  • Finely chopped onion
  • Finely chopped carrot
  • Finely chopped capsicum

Garnish

  • Chopped coriander
  • Pomegranate seeds

Preparation

  1. In a mixing bowl, add 1/2 cup curd.

  2. Add 2 spoons of water and mix.

  3. Add salt as per taste.

  4. Add 1/2 teaspoon turmeric powder.

  5. Add red chilli powder as per taste.

  6. Add 1/2 teaspoon sugar if desired.

  7. Squeeze the juice of 1/2 lemon.

  8. Mix everything well and set aside.

  9. Heat 2 teaspoons of oil in a pan.

  10. Add 1/2 spoon of butter.

  11. Once the butter melts, add 1 teaspoon mustard seeds.

  12. Add 1 teaspoon cumin seeds.

  13. Add a few curry leaves.

  14. Add finely chopped vegetables such as onion, carrot, and capsicum.

  15. Sauté until the vegetables are tender.

  16. Add the curd mixture.

  17. Add a spoonful of water and mix.

  18. Cook until it comes to a boil.

  19. Add the cut bread slices and gently mix.

  20. Transfer to a serving plate.

  21. Garnish with chopped coriander and pomegranate seeds.
