South Indian Buttermilk Stew

Ingredients

  • 1.5 cups thick curd
  • 1/2 cup water
  • coriander leaves
  • tomatoes
  • raw onion
  • salt

Tadka

  • oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 tablespoon urad dal
  • 1/2 tablespoon chana dal
  • green chillies
  • finely chopped onion
  • finely chopped ginger
  • a pinch of asafoetida
  • turmeric powder
  • whole red dry chillies
  • curry leaves

Preparation

  1. Take 1.5 cups of thick curd in a bowl and make it smooth.

  2. Add 1/2 cup of water to the curd.

  3. Add coriander, tomatoes, and some raw onion.

  4. Add salt to taste.

  5. Mix everything well and set aside.

  6. Prepare the tadka by heating oil in a pan.

  7. Add 1 teaspoon mustard seeds and 1 teaspoon cumin seeds to the oil.

  8. Once they crackle, add 1/2 tablespoon urad dal and 1/2 tablespoon chana dal.

  9. When the dal turns light pink, add green chillies, finely chopped onion, and finely chopped ginger.

  10. Once everything is cooked, add a pinch of asafoetida and turmeric powder.

  11. Finally, add whole red dry chillies and curry leaves.

  12. Pour the hot tadka over the curd mixture.

  13. Serve with steaming hot rice.

  14. Garnish with fresh coriander.

Notes

  1. Add vegetables like okra, bottle gourd, or spinach for extra nutrition and heartiness.

  2. This dish is versatile and can be adjusted to personal taste for tanginess and spice.
