South Indian Tamarind Peanuts Rice
Ingredients
- 2 tsp Coriander Seeds
- 2 tsp White Sesame Seeds
- 1.5 tsp Cumin Seeds
- 1 spoon Fenugreek Seeds
- 10-12 Peppercorns
- 2 + 1 Dry Red Chillies
- 2 tsp Dry Coconut
- 1.5 tbs Oil
- 1 small piece of finely chopped Ginger
- 1/4 cup raw Peanuts
- 1 tsp Mustard Seeds
- Pinch of Asafoetida Powder
- 1.5 tsp Split and Skinless Lentils
- 1.5 tsp Bengal Gram Split
- 2 Green Chillies
- Few Curry Leaves
- 1/2 tsp turmeric powder
- Salt as per taste
- 3 tbs Tamarind Pulp (soaked 1/4 cup Imli in hot water and squeezed out the pulp)
- 1 spoon Water
- Small piece of Jaggery
- 2.5 cup Steamed Rice
Preparation
Heat the pan and dry roast the coriander seeds, white sesame seeds, cumin seeds, fenugreek seeds, and peppercorns
Mildly roast the mixture
Add 2 dry red chillies and dry coconut
Roast for 5 minutes on low heat
Turn off the heat, let it cool down, and grind to make masala
Heat 1.5 tablespoons oil in the same pan
Add a small piece of finely chopped ginger
Add 1/4 cup raw peanuts and fry them well
Add 1 teaspoon mustard seeds
Add a pinch of asafoetida powder
When mustard seeds crackle, add 1.5 teaspoons chana dal
Fry until dal turns golden-brown
Add 2 green chillies
Add 1 dry red chilli
Add a few curry leaves
Add 1/2 teaspoon turmeric powder
Add the prepared masala
Add salt as per taste and mix everything well
Add 3 tablespoons tamarind pulp
Add a spoonful of water
Add a small piece of jaggery
When masala is nicely fried, add 2.5 cups steamed rice and mix it well
Turn off the heat and serve it warm
