South Indian Tamarind Peanuts Rice

Ingredients

  • 2 tsp Coriander Seeds
  • 2 tsp White Sesame Seeds
  • 1.5 tsp Cumin Seeds
  • 1 spoon Fenugreek Seeds
  • 10-12 Peppercorns
  • 2 + 1 Dry Red Chillies
  • 2 tsp Dry Coconut
  • 1.5 tbs Oil
  • 1 small piece of finely chopped Ginger
  • 1/4 cup raw Peanuts
  • 1 tsp Mustard Seeds
  • Pinch of Asafoetida Powder
  • 1.5 tsp Split and Skinless Lentils
  • 1.5 tsp Bengal Gram Split
  • 2 Green Chillies
  • Few Curry Leaves
  • 1/2 tsp turmeric powder
  • Salt as per taste
  • 3 tbs Tamarind Pulp (soaked 1/4 cup Imli in hot water and squeezed out the pulp)
  • 1 spoon Water
  • Small piece of Jaggery
  • 2.5 cup Steamed Rice

Preparation

  1. Heat the pan and dry roast the coriander seeds, white sesame seeds, cumin seeds, fenugreek seeds, and peppercorns

  2. Mildly roast the mixture

  3. Add 2 dry red chillies and dry coconut

  4. Roast for 5 minutes on low heat

  5. Turn off the heat, let it cool down, and grind to make masala

  6. Heat 1.5 tablespoons oil in the same pan

  7. Add a small piece of finely chopped ginger

  8. Add 1/4 cup raw peanuts and fry them well

  9. Add 1 teaspoon mustard seeds

  10. Add a pinch of asafoetida powder

  11. When mustard seeds crackle, add 1.5 teaspoons chana dal

  12. Fry until dal turns golden-brown

  13. Add 2 green chillies

  14. Add 1 dry red chilli

  15. Add a few curry leaves

  16. Add 1/2 teaspoon turmeric powder

  17. Add the prepared masala

  18. Add salt as per taste and mix everything well

  19. Add 3 tablespoons tamarind pulp

  20. Add a spoonful of water

  21. Add a small piece of jaggery

  22. When masala is nicely fried, add 2.5 cups steamed rice and mix it well

  23. Turn off the heat and serve it warm
