Steamed Vegetable Muthia with Tempering
Ingredients
- 1 small bottle gourd, cubed
- 3-4 finely chopped green chilies
- 1 small ginger knob, finely chopped
- 2 garlic cloves, finely chopped
- 1 small carrot, shredded
- Finely chopped coriander leaves
- Juice of 1 lemon
- 2 spoons sugar
- 1 teaspoon turmeric powder
- 1 tablespoon coriander powder
- 1 tablespoon oil
- Salt to taste
- 1/2 cup semolina
- 1.5 cups multigrain atta
Tadka
- 2 tablespoons oil
- 2 teaspoons mustard seeds
- 2 teaspoons white sesame seeds
- 1 teaspoon asafoetida powder
- A few curry leaves
Preparation
In a mixing jar, add the cubed bottle gourd, finely chopped green chilies, finely chopped ginger, and finely chopped garlic, then blend and transfer to a mixing bowl.
Add shredded carrot, finely chopped coriander leaves, lemon juice, sugar, turmeric powder, coriander powder, oil, salt, semolina, and multigrain atta to the bowl.
Combine all ingredients to form a soft dough, adding a little water if necessary.
Shape the dough into cylindrical rolls.
Grease a steamer basket and arrange the rolls in it.
Place in a preheated steamer and steam for 20 minutes with the lid covered with a cloth.
After cooling, cut the rolls into pieces.
For the tadka, heat oil in a pan.
Add mustard seeds, white sesame seeds, asafoetida powder, and curry leaves.
Add the cut muthia pieces and toss to coat.
Garnish with chopped coriander and serve.

This is a healthy and nutritious Gujarati snack that can be varied with different vegetables such as spinach or fenugreek.
