Cheesy Corn Vegetable Handvo

Ingredients

  • 1.5 cup semolina
  • 1/2 cup gram flour
  • 1 corn cob (coarsely ground)
  • 1/2 cup curd
  • approx 1/2 cup water
  • some finely chopped vegetables (carrot, capsicum, onion, garlic, chillies)
  • pinch of turmeric powder
  • red chilli powder
  • 1/2 tsp coriander powder
  • 1 tsp sugar
  • 1/2 lemon juice
  • some freshly chopped coriander
  • salt as per taste
  • 1 small packet fruit salt
  • 3 tsp oil
  • 1/2 tsp mustard seeds
  • some white sesame seeds
  • pinch of asafoetida powder
  • few curry leaves
  • Go Cheese Mozzarella
  • coriander
  • safed til

Preparation

  1. In a mixing bowl take 1.5 cup semolina

  2. Add 1/2 cup gram flour

  3. Add 1 corn cob and remove some corn kernels, keep aside

  4. Add 1/2 cup curd

  5. Mix everything well

  6. Add water gradually and keep mixing to make batter as dosa consistency

  7. Rest the batter for 10-15 minutes

  8. Add some finely chopped vegetables

  9. Add some dry spices including pinch of turmeric powder, red chilli powder, 1/2 tsp coriander powder, 1 tsp sugar, 1/2 lemon juice, some freshly chopped coriander and salt as per taste

  10. Mix everything well

  11. Add 1 small packet fruit salt

  12. Heat the pan

  13. Add 2 tsp oil

  14. Add 1/2 tsp mustard seeds

  15. Add some white sesame seeds

  16. Add a pinch of asafoetida powder

  17. Add few curry leaves

  18. When it crackles add half of the batter

  19. Spread some Mozzarella Cheese

  20. Add remaining batter covering the cheese

  21. Cover the lid and cook for 7-8 minutes

  22. Flip the Handvo in a plate

  23. Add 1 tsp oil in same pan

  24. Add some sweet corn and coriander on it

  25. Transfer Handvo in pan keeping the cooked side up

  26. Let it cook for more 7-8 minutes

  27. Flip it in the pan

  28. Sprinkle some cheese, coriander and safed til

  29. Take it on a serving plate

Notes

  1. Adding mozzarella cheese gives a pizza-like twist, making it appealing to children who might not enjoy plain handvo
