Cheesy Corn Vegetable Handvo
Ingredients
- 1.5 cup semolina
- 1/2 cup gram flour
- 1 corn cob (coarsely ground)
- 1/2 cup curd
- approx 1/2 cup water
- some finely chopped vegetables (carrot, capsicum, onion, garlic, chillies)
- pinch of turmeric powder
- red chilli powder
- 1/2 tsp coriander powder
- 1 tsp sugar
- 1/2 lemon juice
- some freshly chopped coriander
- salt as per taste
- 1 small packet fruit salt
- 3 tsp oil
- 1/2 tsp mustard seeds
- some white sesame seeds
- pinch of asafoetida powder
- few curry leaves
- Go Cheese Mozzarella
- coriander
- safed til
Preparation
In a mixing bowl take 1.5 cup semolina
Add 1/2 cup gram flour
Add 1 corn cob and remove some corn kernels, keep aside
Add 1/2 cup curd
Mix everything well
Add water gradually and keep mixing to make batter as dosa consistency
Rest the batter for 10-15 minutes
Add some finely chopped vegetables
Add some dry spices including pinch of turmeric powder, red chilli powder, 1/2 tsp coriander powder, 1 tsp sugar, 1/2 lemon juice, some freshly chopped coriander and salt as per taste
Mix everything well
Add 1 small packet fruit salt
Heat the pan
Add 2 tsp oil
Add 1/2 tsp mustard seeds
Add some white sesame seeds
Add a pinch of asafoetida powder
Add few curry leaves
When it crackles add half of the batter
Spread some Mozzarella Cheese
Add remaining batter covering the cheese
Cover the lid and cook for 7-8 minutes
Flip the Handvo in a plate
Add 1 tsp oil in same pan
Add some sweet corn and coriander on it
Transfer Handvo in pan keeping the cooked side up
Let it cook for more 7-8 minutes
Flip it in the pan
Sprinkle some cheese, coriander and safed til
Take it on a serving plate
Notes
Adding mozzarella cheese gives a pizza-like twist, making it appealing to children who might not enjoy plain handvo
