Quick and Easy Tomato Mint Chutney
Ingredients
- 2 teaspoons oil
- 1/4 cup peanuts
- 3-4 green chillies
- 3-4 garlic cloves
- 4 large ripe tomatoes
- salt
- 1/2 teaspoon turmeric powder
- a big bunch of fresh mint leaves
- 1 tablespoon tamarind pulp
Tadka
- some oil
- 1 teaspoon mustard seeds
- a pinch of asafoetida
- 2 teaspoons urad dal
Preparation
In a pan, take 2 teaspoons of oil.
Add 1/4 cup of peanuts.
Add 3-4 green chillies and 3-4 garlic cloves.
Roast them well.
Add 4 large ripe tomatoes cut into small cubes.
Add salt and 1/2 teaspoon of turmeric powder.
Cook until tomatoes become tender.
Turn off the heat and add a big bunch of fresh mint leaves.
Add 1 tablespoon of tamarind pulp.
Mix everything well and let the mixture cool down.
Coarsely grind the mixture using pulse mode, do not grind smooth.
For the tadka, take some oil in a pan.
Add 1 teaspoon of mustard seeds, a pinch of asafoetida, and 2 teaspoons of urad dal.
Cook the urad dal until it turns golden color.
Pour the hot tadka over the chutney.
Serving suggestions
Serve the mint and tomato chutney with hot steamed rice and a generous spoonful of ghee for a delicious and comforting meal.
