Indian Spiced Cauliflower Stir-Fry
Ingredients
- 1 medium head cauliflower, cut into florets
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- Salt to taste
- 1 tsp coriander powder
- 1 tsp Kashmiri red chilli powder
- 1 tsp or more mango powder
- Chopped coriander leaves
- 1/4 tsp asafoetida
- 6-7 curry leaves
- 2 tbsp mustard oil
Preparation
Heat a nonstick pan over low medium heat, add mustard oil, then add asafoetida and sauté for a few seconds, add mustard seeds and curry leaves, and let them splutter.
Add turmeric powder, salt, and red chilli powder, sauté for a few seconds, then add cauliflower, toss well, cover with a lid, and cook for 5 to 10 minutes on low medium heat.
Once the cauliflower is half cooked, add coriander powder and mango powder, check the salt and add more if needed, then mix the spices well.
Cook on high medium heat to achieve a charred look on the cauliflower.
Once done, sprinkle with chopped coriander leaves.
Tips
You can add nuts of your choice and serve it with any bread or as a salad.
