Simple Spiced Carrots Stir-Fry
Ingredients
- 5-6 medium carrots
- 1/2 tsp red chili powder
- 1 tsp red chili oil
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- salt to taste
- 2 tbsp coriander leaves
- 3 tbsp chopped thyme
- 1 tsp garam masala
- 2 tbsp olive oil or mustard oil
Preparation
Heat oil in a pan over medium heat
Add cumin seeds and cook until they splutter
Add carrots and stir-fry for a few minutes
Add red chili powder, coriander powder, turmeric powder, garam masala, and salt, then mix well
Cook until carrots are tender-crisp
Stir in coriander leaves and chopped thyme
Serve hot
