Simple Spiced Carrots Stir-Fry

Ingredients

  • 5-6 medium carrots
  • 1/2 tsp red chili powder
  • 1 tsp red chili oil
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • salt to taste
  • 2 tbsp coriander leaves
  • 3 tbsp chopped thyme
  • 1 tsp garam masala
  • 2 tbsp olive oil or mustard oil

Preparation

  1. Heat oil in a pan over medium heat

  2. Add cumin seeds and cook until they splutter

  3. Add carrots and stir-fry for a few minutes

  4. Add red chili powder, coriander powder, turmeric powder, garam masala, and salt, then mix well

  5. Cook until carrots are tender-crisp

  6. Stir in coriander leaves and chopped thyme

  7. Serve hot
