Simple Breakfast Tacos

Ingredients

  • Tortilla shells
  • 2 eggs
  • Handful of spinach
  • Sliced avocado
  • Crumbled feta
  • Salsa
  • Jalapeño
  • Cilantro

Preparation

  1. Whisk together eggs and add to a hot pan with a little olive oil, lower heat and cook stirring for 2 minutes.

  2. Add spinach, stir and let cook for 1 more minute.

  3. Heat tortilla shells and top with salsa, egg mixture, sprinkle with feta, jalapeños and cilantro.

  4. Season with salt and pepper.
