Ingredients

  • 2 eggs
  • 1/4 cup almond milk
  • 1 tbsp nutritional yeast or cheese
  • Salt and pepper
  • Veggies (e.g., bell pepper, onion, chopped spinach)
  • Spray oil

Preparation

  1. Dice the bell pepper and onion into thin pieces.

  2. Chop the spinach.

  3. Combine the diced veggies in a bowl.

  4. In a separate small bowl, whisk together the eggs, almond milk, nutritional yeast or cheese, and season with salt and pepper.

  5. Preheat your waffle iron.

  6. Once the waffle iron is hot, generously spray it with nonstick spray.
