Simple Breakfast Hash with Eggs
Ingredients
- Olive oil
- 1 small onion
- 1 bell pepper
- Leftover potatoes
- Salt
- Pepper
- 4 eggs

- Bacon
Preparation
Dice the onion and bell pepper.
Sauté in olive oil for 4 minutes until soft.
Add leftover potatoes, salt, and pepper, and cook for another 2 minutes. Optionally add crumbled bacon.
Create 4 holes in the mixture and crack an egg into each hole.
Cover and cook for about 5 minutes, checking often for desired egg doneness. Remove when the egg whites are set.
Serve immediately.
Alternative potato
Preheat oven to 400°F.
Cube the potatoes.
Toss the cubed potatoes with olive oil, salt, pepper, paprika, and garlic powder.
Bake for 40 minutes, tossing halfway through, until cooked.
Tips
Serve with avocado, green onions, hot sauce, or other desired toppings to enhance flavor and nutrition.
