Spinach and Sweet Potato Pie

Ingredients

  • 300 grams of spinach
  • 1 sheet of vegan puff pastry
  • 1 medium sweet potato sliced
  • 1 medium sweet potato grated
  • 1 onion diced
  • 2 crushed garlic cloves
  • 1 teaspoon of salt
  • pepper
  • 2 tablespoons of olive oil
  • 1/4 cup of water
  • 2 tablespoons of olive oil

Preparation

  1. In a fry pan add 1 tablespoon of oil, onion, 1 garlic clove, sliced sweet potatoes, 1/2 teaspoon of salt, pepper, 1/4 cup of water and cook for 5 minutes or until water has evaporated

  2. Cook with a lid on

  3. Set aside

  4. In a fry pan add 1 tablespoon of oil, 1 garlic clove, 1/2 teaspoon of salt, pepper, spinach, grated sweet potato and sauté for 5 minutes

  5. Set aside

  6. Blind bake pastry in a round 20cm tin for 15 minutes

  7. Then add the cooked spinach and sweet potato mixture to the pastry and place the sliced sweet potatoes on top

  8. Garnish with some spinach

  9. Bake at 180 for around 25 minutes or until pastry is golden brown
