Spinach Quiche Simple and Delicious

Ingredients

  • i large bag of spinach cut
  • 1 bunch of chicory boiled and cut
  • 1 carrot grated
  • 1 small zucchini grated
  • 1/2 cup of diced spring onions
  • 1 1/2 teaspoons of salt
  • pepper
  • 1 1/2 sheets of vegan short crust pastry
  • 2 cloves garlic
  • 150grams cashews
  • 1 tablespoon of nutritional yeast
  • 1 tablespoon of parsley
  • 1 teaspoon of corn flour
  • 1 tablespoon of olive oil
  • 1/2 cup of water

Preparation

  1. In a blender (i used a nutri bullet) place the cashews, 1/2 teaspoon of salt, parsley, garlic, water, nutritional yeast, corn flour and blend

  2. Set aside

  3. In a frypan place the oil, vegetables, 1 teaspoon of salt, pepper and sauté for 10 minutes

  4. Add the cashew sauce to the mixture and simmer for a further 10 minutes on low heat

  5. Place the pastry in a tart tin

  6. Depending on your tart tin you might need extra pastry to fill the gaps

  7. Blind bake the pastry for 20 minutes at 180

  8. Place the cooked mixture in the tart tin and cook for a further 20 minutes at 180
