Tomato and Goat Cheese Omelette
Ingredients
- 2 eggs
- Salt and pepper
- Oil
- 2 tablespoons chopped cherry tomatoes
- Goat cheese
- Fresh basil
- Chili flakes
Preparation
Beat two eggs and sprinkle with salt and pepper.
Heat a non-stick pan over medium-high heat.
Add oil and heat until it spreads easily.
Add the egg mixture and tilt the pan until eggs are evenly distributed.
Turn down the heat and use a spatula to nudge the sides so it’s not sticking.
Add 2 tablespoons chopped cherry tomatoes and several blobs of goat cheese.
Carefully fold the omelette in half.
Remove from the pan and sprinkle with fresh basil and chili flakes.
Best served with toast, potatoes, or mixed greens.
