Copycat Starbucks Egg Bites with Feta
Ingredients
- 4 eggs
- 1/2 cup cottage cheese
- 1/2 cup chopped red bell pepper
- 1/2 cup feta
- 2 tablespoons chopped chives
- salt and pepper to taste
Preparation
Blend 4 eggs and 1/2 cup cottage cheese for 30 seconds.
Add 1/2 cup chopped red bell pepper, 1/2 cup feta, 2 tablespoons chopped chives, and a sprinkle of salt and pepper, then blend for another 30 seconds.
Pour the mixture into egg bite molds and cover tightly with tin foil.
Add 1 cup water to the Instant Pot, place the trivet inside, and set the mold on top.
Close the Instant Pot and use the steam function for 10 minutes, followed by a natural release for 10 minutes.
Remove the molds and enjoy.
