Copycat Starbucks Egg Bites with Feta

Ingredients

  • 4 eggs
  • 1/2 cup cottage cheese
  • 1/2 cup chopped red bell pepper
  • 1/2 cup feta
  • 2 tablespoons chopped chives
  • salt and pepper to taste

Preparation

  1. Blend 4 eggs and 1/2 cup cottage cheese for 30 seconds.

  2. Add 1/2 cup chopped red bell pepper, 1/2 cup feta, 2 tablespoons chopped chives, and a sprinkle of salt and pepper, then blend for another 30 seconds.

  3. Pour the mixture into egg bite molds and cover tightly with tin foil.

  4. Add 1 cup water to the Instant Pot, place the trivet inside, and set the mold on top.

  5. Close the Instant Pot and use the steam function for 10 minutes, followed by a natural release for 10 minutes.

  6. Remove the molds and enjoy.
