Sweet Potato Toast with Soft Boiled Egg

Ingredients

  • Sweet potatoes
  • 3 eggs
  • Bagel seasoning

Preparation

  1. Cut sweet potatoes into approximately 1/3 inch slices.

  2. Bake the sweet potato slices in a toaster oven at 375 degrees Fahrenheit for 20 minutes; check tenderness with a fork.

  3. For the eggs: Place 3 eggs in a small saucepan and cover with cold water.

  4. Heat on medium-high until the water reaches a rolling boil.

  5. Remove from heat, cover the pot, and let sit for 3 minutes.

  6. Transfer the eggs to a bowl of ice water and let them sit for a few minutes before peeling.

  7. Top the baked sweet potato slices with the peeled soft boiled eggs and bagel seasoning.

  8. Note: For better texture, consider cutting the sweet potatoes thinner, increasing cooking time, raising the temperature, or peeling them before baking.
