Easy Sheet Pan Eggs for Meal Prep

Ingredients

  • 16 large eggs

Preparation

  1. Preheat the oven to 300 degrees.

  2. Grease a large rimmed baking sheet.

  3. In a large bowl, beat together the eggs, then add in any veggies you'd like.

  4. Season with salt and black pepper.

  5. Pour the mixture into the prepared pan, making sure the vegetables are distributed evenly.

  6. Bake for about 25-30 minutes, until the eggs are just set.

  7. Remove from the oven and let rest for 5 minutes.

  8. Slice into 10 to 12 pieces.

  9. Save what you don’t plan to use immediately in the freezer or refrigerator.
