Sweet Potato Avocado Toast with Poached Eggs

Ingredients

  • 1 Japanese sweet potato
  • 1/2 avocado
  • 2 eggs

Preparation

  1. Slice the sweet potato and broil for about 12 minutes.

  2. Mash the avocado.

  3. Poach the eggs.

  4. Assemble by spreading the mashed avocado on the broiled sweet potato and topping with poached eggs.
