Poached Eggs with Avocado and Sweet Potato Chips
Ingredients
- 2 eggs
- 1/2 avocado
- 1 small sweet potato
- 1 tsp olive oil
Preparation
Preheat oven to 400°F
Cut the sweet potato into chips
Coat the sweet potato chips with 1 tsp olive oil
Bake the sweet potato chips for 30 minutes at 400°F
Poach 2 eggs using an egg poacher pan
Slice the 1/2 avocado
Assemble the ingredients in a bowl
