Poached Eggs with Avocado and Sweet Potato Chips

Ingredients

  • 2 eggs
  • 1/2 avocado
  • 1 small sweet potato
  • 1 tsp olive oil

Preparation

  1. Preheat oven to 400°F

  2. Cut the sweet potato into chips

  3. Coat the sweet potato chips with 1 tsp olive oil

  4. Bake the sweet potato chips for 30 minutes at 400°F

  5. Poach 2 eggs using an egg poacher pan

  6. Slice the 1/2 avocado

  7. Assemble the ingredients in a bowl
