Easy Meal Prep Breakfast with Egg and Avocado

Ingredients

  • 2 eggs
  • everything but the bagel seasoning
  • 1/2 avocado
  • 1 small sweet potato
  • tomatoes

Preparation

  1. Boil eggs for 7 minutes and place in an ice bath.

  2. Sprinkle the eggs with everything but the bagel seasoning.

  3. Cut the sweet potato into chips and broil for 10 minutes on the bottom shelf.

  4. Assemble the meal with avocado and tomatoes.
