Savory Egg and Sweet Potato Breakfast Bowl

Ingredients

  • 2 eggs
  • 1 sweet potato
  • 1/2 avocado
  • everything but the bagel seasoning

Preparation

  1. Boil eggs for 7 minutes and cool in cold water before peeling.

  2. Cut sweet potato into slices and broil at 500°F for 10-12 minutes on the bottom shelf.

  3. Slice avocado and season with everything but the bagel seasoning, then assemble into a bowl.
