Easy Breakfast Bowl with Eggs and Sweet Potato

Ingredients

  • 2 eggs
  • strawberries
  • 1/2 avocado
  • 1 Japanese sweet potato
  • 1 teaspoon avocado oil
  • kale

Preparation

  1. Boil 2 eggs for 6 minutes to achieve a soft boil.

  2. Slice the Japanese sweet potato into fry shapes.

  3. Coat the sweet potato slices with 1 teaspoon of avocado oil.

  4. Broil the coated sweet potato on the bottom shelf at 500°F for 10-12 minutes.

  5. Sauté the kale until it is tender.

  6. Assemble the bowl with soft boiled eggs, strawberries, half avocado, broiled sweet potato fries, and sautéed kale.

  7. The meal comes together in about 10 minutes if ingredients are prepped ahead of time.
