Easy Veggie Egg Bowl with Sweet Potato

Ingredients

  • 1 egg
  • ghee
  • 1 Japanese sweet potato
  • tomatoes
  • kale
  • 1/2 avocado
  • Trader Joe’s everything but the bagel seasoning

Preparation

  1. Fry the egg over low to medium heat in ghee until edges are crispy, preferably sunny side up.

  2. Broil the Japanese sweet potato for 10 minutes.

  3. Sauté the kale until tender.

  4. Assemble all ingredients in a bowl.

  5. Season with Trader Joe’s everything but the bagel seasoning to taste.

  6. This bowl comes together in about 10 minutes and can be enjoyed for breakfast, lunch, or dinner to stay full for hours.
