Savory Breakfast Bowl with Sweet Potato Avocado and Egg
Ingredients
- 1 egg
- ghee
- 1/2 avocado
- red pepper flakes
- 1 Japanese sweet potato
Preparation
Cut the Japanese sweet potato into cubes and broil at 500°F for 10 minutes on the bottom shelf.
Fry the egg in ghee over low to medium heat.
Slice the avocado and sprinkle with red pepper flakes.
Combine all ingredients in a bowl and serve.
For meal prep, prepare sweet potatoes in advance and reheat with the egg.
Alternatively, boil the egg ahead of time if you do not have time to fry it.
