Savory Veggie Bowl with Japanese Sweet Potatoes and Bacon

Ingredients

  • 1 egg
  • 1 Japanese sweet potato
  • Applegate turkey bacon
  • 1/2 avocado
  • spinach

Preparation

  1. Boil the egg for 7 minutes.

  2. Broil the Japanese sweet potato for 10 minutes on the bottom shelf of the oven to avoid burning.

  3. Broil the turkey bacon for 5 minutes, then flip it with a fork and cook for another 5 minutes until crispy.

  4. Sauté the spinach.

  5. Mash the 1/2 avocado.

  6. Assemble all the ingredients in a bowl.

  7. Make 4-5 eggs at once and store them for use throughout the week as snacks or in meals.
