Savory Veggie Bowl with Japanese Sweet Potatoes and Bacon
Ingredients
- 1 egg
- 1 Japanese sweet potato
- Applegate turkey bacon
- 1/2 avocado
- spinach
Preparation
Boil the egg for 7 minutes.
Broil the Japanese sweet potato for 10 minutes on the bottom shelf of the oven to avoid burning.
Broil the turkey bacon for 5 minutes, then flip it with a fork and cook for another 5 minutes until crispy.
Sauté the spinach.
Mash the 1/2 avocado.
Assemble all the ingredients in a bowl.
Make 4-5 eggs at once and store them for use throughout the week as snacks or in meals.
