Savory Stuffed Sweet Potatoes with Eggs and Kale
Ingredients
- 2 sweet potatoes
- 2 eggs
- ghee
- red pepper flakes
- kale
- 1/2 avocado
Preparation
Bake sweet potatoes at 400°F for 50 minutes. For extra caramelization, leave in the oven for another 30 minutes after turning it off.
Scramble 2 eggs in ghee with red pepper flakes.
Sauté kale.
Slice 1/2 avocado.
Top the baked sweet potatoes with the scrambled eggs, sautéed kale, and sliced avocado.
Optionally, warm up the sweet potatoes by broiling in the oven, toaster oven, or microwave before assembling.
