Carrot Cake with Vanilla Protein Powder

Ingredients

Dry mix

  • 2-3 medium carrots (grated)
  • 1 cup flour
  • 2 scoops Unicorn Superfoods Vanilla Cake Plant Protein
  • 10-15g sweetener (coconut sugar)
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • Pinch of salt

Wet mix

  • 1/2 cup applesauce
  • 1/4 cup nut milk
  • 1/4 cup maple syrup
  • 1 egg and 100ml egg whites
  • 1 teaspoon vanilla extract

Icing

  • 1/2 cup Greek yogurt
  • 1/2 cup fat-free cream cheese
  • Pinch of lemon zest
  • Sweetener to taste

Preparation

  1. Mix together the dry ingredients

  2. Add the wet ingredients

  3. Bake for 15-30 minutes at 180 degrees Celsius

Icing

  1. Mix the icing ingredients together

  2. Spread over the cooled cake
