Carrot Cake with Vanilla Protein Powder
Ingredients
Dry mix
- 2-3 medium carrots (grated)
- 1 cup flour
- 2 scoops Unicorn Superfoods Vanilla Cake Plant Protein
- 10-15g sweetener (coconut sugar)
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- Pinch of salt
Wet mix
- 1/2 cup applesauce
- 1/4 cup nut milk
- 1/4 cup maple syrup
- 1 egg and 100ml egg whites
- 1 teaspoon vanilla extract
Icing
- 1/2 cup Greek yogurt
- 1/2 cup fat-free cream cheese
- Pinch of lemon zest
- Sweetener to taste
Preparation
Mix together the dry ingredients
Add the wet ingredients
Bake for 15-30 minutes at 180 degrees Celsius
Icing
Mix the icing ingredients together
Spread over the cooled cake
