Gluten-Free Vegan Banana Nut Pancakes
Ingredients
- 1 large overly ripe banana, mashed
- 1 C almond milk
- 1 tbsp apple cider vinegar
- 1 tbsp Madagascar Vanilla
- 1 1/4 C GF 1:1 all purpose flour
- 1 tbsp baking powder
- 1/2 tsp cinnamon and nutmeg
- Pinch of salt
- 1/3 c chopped pecans (plus more for topping)
Toppings
- vegan butter
- maple syrup
- pecans
- sliced bananas
- hemp seeds
Preparation
Add first 4 wet ingredients to a bowl and stir until combined.
Add in all dry ingredients, except pecans. Mix well.
Stir in pecans.
Heat a large cast iron skillet over low heat and spray with a light coating of oil.
Pour 1/4 c of batter for each cake. Cook for 3 minutes or until the batter is slightly bubbly and hole-y on top. Flip and repeat until golden brown on both sides!
Top with a spread of vegan butter, a drizzle of maple syrup, sliced bananas, and hemp seeds
