Gluten-Free Vegan Banana Nut Pancakes

Ingredients

  • 1 large overly ripe banana, mashed
  • 1 C almond milk
  • 1 tbsp apple cider vinegar
  • 1 tbsp Madagascar Vanilla
  • 1 1/4 C GF 1:1 all purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp cinnamon and nutmeg
  • Pinch of salt
  • 1/3 c chopped pecans (plus more for topping)

Toppings

  • vegan butter
  • maple syrup
  • pecans
  • sliced bananas
  • hemp seeds

Preparation

  1. Add first 4 wet ingredients to a bowl and stir until combined.

  2. Add in all dry ingredients, except pecans. Mix well.

  3. Stir in pecans.

  4. Heat a large cast iron skillet over low heat and spray with a light coating of oil.

  5. Pour 1/4 c of batter for each cake. Cook for 3 minutes or until the batter is slightly bubbly and hole-y on top. Flip and repeat until golden brown on both sides!

  6. Top with a spread of vegan butter, a drizzle of maple syrup, sliced bananas, and hemp seeds

Notes

  1. Ideal for Christmas morning breakfast as a festive treat.
