Pumpkin Baked Oatmeal Muffins

Ingredients

  • 1 1/3 cups milk (oat milk suggested)
  • 2 eggs
  • 1/2 cup maple syrup
  • 2/3 cup pumpkin purée
  • 3 cups old fashioned oats
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin spice
  • 2 teaspoons cinnamon
  • 1/2 teaspoon vanilla
  • Pinch of salt

Optional add-ins

  • 1 cup semi-sweet chocolate chips
  • or pumpkin seeds
  • or nuts

Preparation

  1. Mix everything in a bowl, then add in chocolate chips.

  2. Spray a muffin tin with cooking spray.

  3. Fill 12 muffin cups to the top with the mixture.

  4. Bake at 350 degrees for 25 to 30 minutes until the top is set and lightly browned.

  1. Store in the refrigerator for up to a week.
