Pumpkin Oatmeal Cookies

Ingredients

  • 2 cups and 1 tablespoon gluten-free flour
  • 1 teaspoon baking soda
  • 4 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups old fashioned oats
  • 1 cup unsalted butter, melted
  • 3 tablespoons maple syrup
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 3/4 cup pumpkin purée
  • 1 egg yolk
  • 2 teaspoons vanilla
  • 1 1/2 cups semi-sweet chocolate chips

Preparation

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Whisk together the flour, baking soda, cinnamon, salt, and oats in a large bowl.

  3. Whisk together the rest of the ingredients in a separate bowl and combine, ending with the chocolate chips.

  4. Spoon around 1.5 tablespoon-sized balls of cookie dough onto a lined cookie sheet.

  5. Bake for 12 to 13 minutes or until the edges are brown.

  6. The cookies will seem very soft and chewy, so wait for them to cool before eating.
