Quick and Easy Oatmeal Chocolate Chip Cookies
Ingredients
- 1/2 cup unsalted butter, room temperature
- 1/2 cup brown sugar
- 1/8 cup sugar or 2 tablespoons sugar
- 1 egg
- 1/2 tablespoon vanilla extract
- 1/2 tablespoon honey
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 1/2 cups old-fashioned oats
- 3/4 cup semi-sweet chocolate chips
Preparation
Beat butter and sugars together for 2 minutes on high.
Add egg and beat for 1 minute.
Add vanilla and honey.
In a separate bowl, whisk baking soda, cinnamon, salt, and flour together.
Add the dry ingredients to the wet ingredients and beat on low until combined.
Mix in the oats and chocolate.
Refrigerate the dough for 30 minutes to overnight; if refrigerated overnight, let it sit out for 30 minutes before baking.
Bake at 350 degrees Fahrenheit for 11-12 minutes until the edges are slightly brown.
