Homemade Oatmeal Raisin Cookies
Ingredients
- 2/3 cup sugar
- 2/3 cup light brown sugar
- 1/2 cup softened butter
- 1/2 cup vegetable shortening
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla
- 3 cups oats
- 1 cup flour
- 1 cup raisins, chopped nuts, or chocolate chips (optional)
Preparation
Preheat the oven to 375 degrees Fahrenheit.
In a deep bowl, place the sugar, brown sugar, butter, and vegetable shortening together. Using an electric mixer, beat until the mixture becomes fluffy. Add the eggs and vanilla and continue beating until they are fully incorporated.
Sift the flour, baking soda, cinnamon, baking powder, and salt, then add the oats and raisins or mix-ins.
Add the flour mixture to the butter mixture and stir until fully combined.
Drop approximately 1 tablespoon of dough onto an ungreased baking sheet, spacing them out.
Bake the cookies for about 10 minutes or until golden brown.
Transfer the cookies from the baking sheet to a wire rack and let them cool completely before serving.
