Raisin and Hazelnut Cookies
Ingredients
- 200g butter
- 1 cup sugar
- 2 eggs
- 1 packet vanilla
- 1 packet baking powder
- 1 cup raisins
- 1 cup hazelnuts
- Zest of 1 lemon
- 3.5 cups flour
Preparation
Set aside one egg yolk for brushing the tops.
Mix butter, sugar, eggs, vanilla, and lemon zest.
Add flour and baking powder and knead the dough.
Add hazelnuts and raisins and knead again.
On parchment paper or plastic wrap, roll out the dough with a rolling pin, cut into shapes, and place on a baking sheet lined with parchment paper.
Brush with the reserved egg yolk, make scratches with a fork, and bake at 180°C.
