Crunchy Walnut Oatmeal Biscuits
Ingredients
- 2 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3 cups quick oats
- 1 cup softened vegetable shortening
- 1 cup fine granulated sugar
- 1 cup light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
Preparation
On a piece of parchment paper or in a deep bowl, sift the flour, baking soda, and salt, then add the oats.
In the mixer bowl, place the shortening, fine sugar, and brown sugar, attach the beater, and run the mixer on medium speed until the mixture is fluffy and creamy.
Add the eggs and vanilla, and run the mixer on medium speed until the eggs are incorporated.
Add the flour and oat mixture, and run the mixer on medium speed until dough forms and pulls away from the sides of the bowl.
Remove the beater, add the walnuts, and use a wide plastic spoon to stir until mixed.
Place the dough on the kitchen counter and shape it into a cylinder about 3 inches in diameter, then wrap the dough in plastic wrap and place it in the refrigerator overnight.
Position the rack in the center of the oven and preheat the oven to 180°C.
Bring short-rimmed baking sheets and place a piece of parchment paper in them.
Remove the dough from the refrigerator, remove the plastic wrap, use a sharp knife to cut the dough into thin circles, and place the circles on the baking sheets leaving 1 inch between each.
Bake the biscuits for 8 minutes or until the bottom is golden brown.
Remove the biscuits from the oven, use a wide metal spatula to transfer them to a wire rack, and let them cool completely before serving.
