Gluten-Free Lemon Sugar Cookies

Ingredients

  • 2 sticks unsalted butter, room temperature
  • 1 1/2 cups sugar
  • 3 tablespoons lemon zest
  • 2 tablespoons fresh lemon juice

Preparation

  1. Beat butter, sugar, and lemon zest together.

  3. Gradually add flour, baking soda, and salt; mix until combined.

  4. Chill the dough in the refrigerator for 30-60 minutes.

  5. Preheat the oven to 350 degrees Fahrenheit.

  6. Roll the dough into small balls and roll them in sugar.

  7. Bake for 11-13 minutes until the edges are golden.
