Pear and Almond Baked Oats
Ingredients
- 4 pears, ideally ripe but firm
- 2 cups oats
- 1 1/2 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 2 eggs or flax eggs
- 2 tsp vanilla
- 1 3/4 cup oat milk
- 1/3 cup maple syrup
- 2 tbsp extra virgin olive oil
- 1 tsp sugar of your choice (I used light brown)
- 1/4 cup flaked almond
- 1/4 - 1/2 tsp almond extract (optional, add if you really love almond flavour!)
Preparation
Preheat the oven to 180C
In a large bowl mix the oats, cinnamon, baking powder and salt
In another bowl whisk together the eggs, vanilla, oat milk, maple syrup, olive oil and if using the almond extract.
Pour the liquid mix over the oat mix and stir together
Peel the pears. Cut three of them into cubes and gently fold into the oat mix. Slice the remaining pear into thin slices.
Pour the oat mix into an ovenproof dish. Arrange the sliced pear pieces on top, just resting on the mix.
Sprinkle the almonds and sugar on top too.
Bake for 40-45 minutes till the top is golden brown
Let it cool a little, serve and enjoy!
Tips
This was our breakfast on Sunday morning using the beautiful pears from our Riverford fruit box and it was delicious! I love baked oats because it feels like having cake for breakfast and this is probably my favourite version. The smells when this is baking are incredible!
