Apple and Cinnamon Overnight Oats

Ingredients

  • 1/2 medium apple
  • 1/2 cup oats
  • 1/4 cup dairy-free milk
  • 2 tbsp dairy-free yogurt
  • 2 tbsp unsweetened applesauce
  • 1 1/2 tbsp maple syrup
  • 1 tbsp chia seeds
  • 1/4 tsp vanilla
  • 1/4 tsp cinnamon
  • dash of salt
  • 1 tbsp chopped pecans

Preparation

  1. Add the oats, milk, yogurt, applesauce, maple syrup, chia seeds, vanilla, cinnamon, and salt to a cup or divide equally between two cups and whisk well.

  2. Chop the apple and pecans into smaller pieces, then add half the apple and all the pecans to the oats mixture and mix in.

  3. Top the oats with the remaining apple pieces.

  4. Cover with a lid or foil and refrigerate overnight.

Serving suggestions

  1. In the morning, remove from the refrigerator and add additional toppings such as pecans, cinnamon, vegan caramel, or others as desired.
