Cinnamon French Toast with Tofu
Ingredients
- 8 slices of firm bread, substitute with gluten-free bread
- 1 cup dairy-free milk, almond used
- 1 tablespoon ground flax seed
- 1/2 cup firm or extra firm tofu, drained and patted dry
- 1/2 tablespoon cinnamon
- 2 teaspoons maple or agave syrup
- 1 tablespoon vanilla
- 1/8 teaspoon salt
- 2 tablespoons dairy-free butter or spray oil for frying
Preparation
Preheat your oven to 350 degrees Fahrenheit. Place bread slices on a baking pan and bake for 5 minutes, then flip and bake for an additional 5 minutes.
In a high-powered blender or food processor, combine milk, flax seed, tofu, cinnamon, vanilla, maple syrup, and salt. Pulse until smooth and creamy.
Pour the mixture into a large shallow bowl and refrigerate for 10-15 minutes to thicken.
Preheat a large frying pan on medium heat. Grease the pan with one teaspoon of dairy-free butter or spray oil.
Remove the French toast mixture from the refrigerator. Dip the slices of bread in the batter, covering both sides. Gently shake off excess batter.
Fry each side for about 3 minutes or until crispy and brown. Repeat until all slices are cooked.
Top your French Toast with fried apples, cinnamon, and drizzled maple syrup.

Tofu is used to make the batter thick and add plant protein for a nutritious breakfast or brunch.
