Cinnamon French Toast with Tofu

Ingredients

  • 8 slices of firm bread, substitute with GF bread
  • 1 cup dairy-free milk, I used almond
  • 1 Tbsp ground flax seed
  • 1/2 cup of firm or extra firm tofu, drained and patted dry, GF
  • 1/2 Tbsp cinnamon
  • 2 tsp maple or agave syrup
  • 1 Tbsp vanilla
  • 1/8 tsp salt
  • 2-3 Tbsp dairy-free butter, for the frying pan or use spray oil

Preparation

  1. In a bowl, combine the dairy-free milk, ground flax seed, tofu, cinnamon, maple or agave syrup, vanilla, and salt to make the batter

  2. Heat dairy-free butter in a frying pan over medium heat

  3. Dip each slice of bread into the batter, ensuring both sides are coated

  4. Fry the bread slices in the pan until golden brown on both sides

  5. Serve warm
