High Protein Cinnamon Bun Style Tofu Pancakes
Ingredients
Pancakes
- 300 g soft tofu
- 1 tsp vanilla
- 1/2 cup soy milk
- 1 cup flour
- 1/2 cup brown sugar
- 2 tsp baking powder
- 1/2 tsp salt
Cinnamon topping
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 2 tbsp melted butter
Icing
- 125 g cream cheese
- 1/2 cup icing sugar
- 1/2 tsp vanilla
Preparation
Blend the pancake ingredients to make the batter.
Mix the cinnamon topping ingredients.
Beat the icing ingredients until smooth.
Cook the pancake batter in an oiled skillet.
While cooking the pancakes, swirl the cinnamon topping onto them.
