Amazing Apple Cinnamon Rolls
Ingredients
Dough
- 1/2 cup vegan unsweetened yogurt (I used @kitehillfoods )
- 1 cup AP flour, plus more for dusting
- 1 tsp baking powder
- 1 tsp vanilla
- Pinch of salt
Sautéed apples
- 1 cup apple, small dice
- 1 tbsp maple syrup
- 1 tsp coconut oil or vegan butter
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
Filling
- 1 tsp coconut oil or vegan butter, melted
- 2 tsp brown sugar
- 1/2 tsp cinnamon
Cinnamon sugar glaze
- 2 tbsp vegan yogurt
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- 2 tbsp powdered sugar
Preparation
Preheat oven to 350 degrees. In a small sauté pan, heat butter or oil over medium heat. Add apples, maple syrup and spices. Sauté until apples are soft, about 5 minutes. Allow to cool while you complete next steps.
In a small mixing bowl, combine all dough ingredients and mix until a loose dough forms. Turn out onto a generously floured surface. Flour your hands and knead dough 10-15 times. Flour both sides of the dough and rolling pin, then roll out into an approximately 5'' by 10'' rectangle that is 1/4'' thick.
Brush entire top of dough with melted coconut oil or butter. Sprinkle cinnamon and brown sugar over top, then add sautéed apples in a single layer.
Starting from the bottom, roll up the dough into a large cinnamon roll (flour your hands well), then cut into 3 smaller cinnamon rolls. Place rolls in a greased 12-14oz ramekin.
Brush cinnamon rolls with melted coconut oil or vegan butter (vegan butter recommended). Bake for 35-40 minutes (35 minutes for a gooey center, 40 for more cooked through).
While cinnamon rolls are baking, combine icing ingredients. Allow cinnamon rolls to cool 5 minutes then drizzle on icing.
