Vegan Waffles with Ginger and Cinnamon

Ingredients

Dry

  • 1c oat flour
  • 1c buckwheat flour
  • 1tbsp vanilla protein powder
  • 1tsp baking powder
  • 1/4tsp fine sea salt
  • 1/2tsp ground ginger
  • 1tsp cinnamon

Wet

  • 1c cashew milk
  • 1tsp apple cider vinegar
  • 1c water (plus more if needed)
  • 3tbsp melted coconut oil
  • 1tsp vanilla
  • 1 flax egg (or 1 real egg)

Preparation

  1. Preheat oven to 200 degrees.

  2. Prepare flax egg and set aside.

  3. Combine milk, water, and apple cider vinegar, whisk together, and set aside.

  4. In a separate bowl, combine dry ingredients, whisk together, and set aside.

  5. Add flax egg and wet ingredients to dry ingredients and mix gently. Add more liquid if needed for consistency.

  6. Heat waffle iron.

  7. Spoon a heaping ladle of batter into the waffle iron. Cook until done, then transfer to a wire rack in the preheated oven while making the remaining waffles.

Tips

  1. Serve with ripe plums, bananas, and yogurt for a tasty breakfast.

  2. This recipe yields about 4 large round waffles.
